Hades Epilogue Requirements: Everything We Know
To get the true ending in Hades, you have to beat the game 10 times. Without going into spoilers, the scenario for the final battle will be different on the 10th run. You'll get to experience the true ending, but you won't have the epilogue quest just yet.
It's not exactly known what triggers the epilogue quest, but players have reported that playing through the game several more times while progressing will eventually lead to the quest trigger. The quest itself is rather short, so the most difficult part is actually getting it.

It doesn't matter what difficulty you play the game on, so you can use God Mode to easily run through the game to get to the epilogue faster.
Players have reported getting the epilogue after maxing out Bonds with five of the nine gods. You'll run into this eventually as long as you keep playing through the game after the true ending. It will also depend on how much you forge the Bonds in each run, as some players have triggered the epilogue as soon as the true ending was unlocked.
