Animal Crossing: New Horizons players are able to purchase white turnips from special Sunday-exclusive vendor, Daisy Mae, for anywhere between 90-120 bells. There is no limit to how many turnip stalks they can purchase—besides their own budget, of course. Throughout the week, they are then obligated to sell their stalks in accordance with the trends given by Timmy and Tommy Nook. There's always a significant opportunity for revenue with turnips.
Although, what happens if you don't sell your stalks in time?

There are several reasons why players would encounter rotten turnips. Unfortunately, these are mostly due to their own negligence. A watched stalk never spoils, so to speak.
Turnips can rot if left in the player's inventory and not sold before the following week. On the Sunday morning after being bought, any turnips still being held and not sold will become rotten the moment Daisy Mae steps onto your island.
Now, this may lead some players to say, "No problem! I'll just time travel back." Don't be fooled. The Nintendo developers have cut off this advantage regarding stalks, as well. If anyone who has a residence on the island decides to time travel, then everyone's turnips on the island will rot immediately.
Yes, we do mean everyone's turnips. Any stalks still on the affected island are subject to the penalty. This includes in your pocket, in another resident's pocket, placed on the ground outside, placed on the floor in your home, and so on.
There is no way to reverse rotting once it happens and no way to keep the turnips from rotting under the above conditions. Once your turnips rot, you'll have to wait patiently to get more from Daisy Mae.
It's not all bad, despite the possible lost revenue. Rotten turnips can be used to attract special insects, like ants, for your museum or for you to sell. Spoiled stalks can also be sold to the Nooklings for a flat rate.
